Twice Baked Chipotle Chicken Sweet Potatoes

I adapted the following recipe from http://seaystanford.com/21-day-fix-lunch-recipes/ and, in my opinion, made it even more delicious! Seriously, it’s the perfect combination of sweet and spicy. The husband was all about these. Told me that I should add them to my party recipes. Said they would make me friends, lol. Anyways, here’s the recipe:

Ingredients

3 medium to large sweet potatoes

3-4  boneless skinless chicken breast

1/4 cup olive oil

2 tablespoon fresh lime juice

2 cloves garlic, minced or grated
3 whole chipotle peppers, minced

1 teaspoon dried oregano

1 teaspoon cumin
2 teaspoons chili powder

salt and pepper, to taste

2  cups spinach, chopped

1 cup shredded cheddar cheese

2 tablespoons greek yogurt

Directions

Preheat oven to 350 degrees.

Wash your sweet potatoes and prick all over with a fork. Place in the microwave for 15-20 minutes. (I used the potato button twice to get the potatoes fully cooked. My sweet potatoes were very large.)

Place your chicken in a medium pot with water and bring to a boil. Continue to boil under chicken is cooked through. Remove from pot and shred into small pieces. 

When the sweet potatoes are done, cut them in half and allow to cool for 5-10 minutes.

In a large bowl, combine the olive oil, lime juice, garlic, chipotle peppers, oregano, cumin, chili powder, salt and pepper. Add shredded chicken and stir. Set aside. 

Heat a small skillet over medium heat and wilt the chopped spinach. Add the spinach to the chicken mixture.

Scrape the sweet potato out of the peel, leaving a medium size layer of flesh inside with the peel so that it can stand up on its own and place on a cookie sheet. 

Add the removed sweet potato to the bowl with the chicken and spinach mixture. Add in 1/2 cup of shredded cheese and the 2 tablespoons of Greek yogurt. Mix thoroughly. 
Stuff the skins with the chicken mixture. Top with shredded cheese.

Bake for 10 minutes or until the cheese has melted. You could also set your broiler to high to melt the cheese. Remove from oven and enjoy! 

Hearts, Flowers & Quiet Gestures

While I’m all for hearts, flowers, love and displays of affection I feel a bit overwhelmed with the amount of it appearing on my social media today. Yes, I’m very well aware that today is Valentine’s Day and yes, I understand it’s a day for over-the-top, yell-it-from-the-mountain-tops, share your love with the world day but I can’t help but stop and wonder why. Why do we have to celebrate today with such gestures? Why can’t we celebrate with quiet moments between those that we care about. I can’t help but wonder what the other 364 days look like for couples that are so much in love, in public, all. the. time. 

My relationship with Jared is one that I value and cherish above any other relationship I have but I don’t openly display it on my social media platforms because it’s ours. Only ours. I don’t want to share it with anyone else. (I’m selfish that way) I realize I share a lot, and I mean a lot, of my life and personality on social media but I choose not to share much about us. That’s because our relationship is something I want to keep just for us. It’s something I’m confident in. It’s something I don’t need to share. I don’t need to put our love on display to be seen by all. I don’t need it to collect likes and loves and thumbs up to know that it’s real. 


Our love is 365 days, 52 weeks a year, no breaks, no stops, always growing and always changing. Our love is laughing until I pee my pants (yea this has happened), playing hide and seek with nerf guns through the house, the first look on our wedding day and 1 AM feedings and diaper changes. Our love is strong and deep. It’s raw, it’s emotional but most importantly it’s real. (I’m not knocking those of you sharing your love on Facebook. Go on and share you love fools!) I’m simply explaining why I chose not to overstate or over share our relationship. 

I get the idea behind today but why can’t we celebrate our relationships each day with our partners. and most of us probably do. Why aren’t we valuing the quiet gestures today though? The open doors, the clean laundry, the third time in a row that my husband gets up in the middle of the night to take care of the baby? Those are the moments to value in a relationship. Those are the things to cherish. Those are the things to keep to yourselves. If you share it all on social media you might as well date Facebook. ๐Ÿ˜‚๐Ÿ˜‚๐Ÿ˜‚ On that note, I’m off to share a few moments with my love and our little tonight. Happy Valentine’s Day! 

Doing it All

Lately I’ve heard several comments like “How do you do it all?” or “I don’t know how you do it.” While I’m flattered by these comments and the thought of appearing to have it all together the truth of the matter is that my life is messy and I’m running a million miles a minute chasing one deadline after another. I have successes and failures just like everyone else. I’m dedicating this post to sharing the messy side of my life and how it fits into me “doing it all.” 
 Let’s started with meal prepping on Sunday. The finished picture of the containers nicely stacked in the refrigerator is deceiving. Especially when the rest of my kitchen looks like the above pictures. During my meal prep I use an absurd amount of dishes, leave spilled ingredients on every inch of my countertops, and can scrap enough food up off the floor to have lunch. ๐Ÿ˜‚ It’s messy but it’s my messy. And, once my meals are nicely organized in the refrigerator and I’ve taken my picture for social media, I clean up my mess. Because, with an 8 month old crawling you can’t leave food on the ground, lol. 

My work/life balance is just as messy as my meal prep is sometimes. This week has been the perfect example. With Jared being gone at the beginning of the week and me having too much on my plate, I’ve definitely embodied the “chicken with its head cut off” motto. 

This morning as I was working on a PowerPoint for my Intro to Horticulture classes to take notes on today I get a call from Jared that the baby threw up at day care. I hadn’t even typed up my study guide for fifth period and my whiteboard still had all the same writing from yesterday. After scrambling to finish student worksheets and typing out my sub plans I was on the road to go pick up Emery to take her to the doctor’s office. 

On my way to get her I realize that Jared has the diaper bag. Talk about poor planning. Seriously? One diaper bag that we share? I had to detour to pick up said diaper bag and ended up 15 minutes late to our appointment. 
I spent my time at home setting up his and hers diaper bags to avoid any apocalyptic disasters for one of us. I had piles everywhere and was in between doing this, getting a loud of dirty baby clothes started, and getting a sick baby to nap. 
Some days I do have it all together but most of the time I’m just good at making to-do lists to help me keep it together. I use my panda planner daily, write goals, highlight important things, set reminders in my phone, and talk to myself…a lot. My point being, doing it all doesn’t have to be clean and neat and tidy. It’s messy and disorganized and chaotic. But, most importantly, it’s whatever works for you. 

What goes first?

“You always have time for the things you put first.”

But what do you put first? And, more importantly, how often do you put YOU first? I can say that for a long time I was very much towards the bottom of my list of things. My husband, our house, my work, my students, and now my baby are usually prioritized about my own self. Does my list change constantly? You betcha! Last year, I would leave myself towards the bottom of the list and focus on those around me.

It wasn’t until recently that I realized that I had to put myself higher on my list in order to better serve those around me. As I finish up Core de Force (I’m on day 26) I have made my health a priority in my life and, because of this decision, I always have time to get my workout in.

To most people reading this post, the picture above just looks like a bedroom. And, most days, that’s exactly what it is. But for a small amount of time each day, it is my solitude. It is where I go to focus on me; to focus on my health and my well-being. I push play and for that time I only focus on me.

My results in a few days will not be a dramatic weight loss but it will be so much more in so many ways.

As I was working through the rounds of MMA Speed last night, I felt the difference from day 1 to now. I remember thinking ho hard the 6 rounds were on day one and questioning if this would even work. Tonight, I’m left wanting more. 6 rounds were nothing and I could see and feel my muscles working differently than they had the first night.

In the course of this program, I’ve fit back into pre-pregnancy pants! I’m talking multiple pairs of pants! Pants that I couldn’t button last month! I’ve had more focus throughout the day, both at work and in my home life. Because of my gained focus, I am getting better at planning and executing my day. Things on my daily to-do list are getting crossed off! I have energy and don’t feel stressed like I typically do at this time of the school year. ย img_4261

While I know I am not done with focusing on my health when CDF ends in a few days, I now have the tools to maintain a healthy life and focus on the habits that allow me to better myself and those that depend on me. As a society, we so often put ourselves at the bottom of our lists. Move yourself up and see the benefits it has on all aspects of your life.

Sunday Meal Prep

I’ve spent the last three weeks using my Sunday to meal prep for each week. Prior to this I would plan my meals for the week but cook throughout the week.I prided myself on having the week planned out and treasured our Sunday morning grocery shopping trips. Until recently, ย I hadn’t realized the value and time of meal prepping.

With Emery becoming more and more active, and our schedules getting busier (welcome to Spring semester!) I needed to find a way to save time throughout the week – especially at night. I’ve read about meal prepping. I’ve pinned recipes and blogs about meal prepping. And yet, I’ve never meal prepped. Until now.

I’m not one to reinvent the wheel – especially when it comes to cooking. If it’s tried and true (and tasty) it’s a keeper! In another world, I would love to invent my own recipes and spend hours in the kitchen. In my current world that isn’t a possibility so cook books, Pinterest and family recipes it is. I’m using this same strategy with my venture into Sunday meal prepping. I use the Team BeachBody website and Pinterest to find meal plans and prepping that I can do in a couple of hours. The end result was a fridge full of breakfast, lunch, dinner and snack options for the week. Just grab and go!

What I really liked about this week’s meal prep was the step by step directions that help you tackle it all. My biggest hold up with meal prepping before was the idea that it seemed time consuming, tedious and a bit overwhelming. Seriously, all meals for a week? Cooked at once? Is that even possible?

Not only is it possible, it is totally worth it! 90 minutes in the kitchen today will save me anywhere from 30 minutes to an hour each night this week. That’s time to spend with Jared and Emery, or a workout, or a TV show, or extra sleep! I’m excited to continue my meal prep Sundays and trying new recipes. Easy Spinach Chicken Pizza

Healthy and pizza dont always see eye to eye but in this recipe they do! It’s quick, easy and healthy. What more can you want? 

Ingredients:

Corn Meal

Whole wheat pizza dough

Rotisserie chicken (shredded)

1 Tbl Olive Oil

1/2 tsp rosemary

1/2 tsp minced garlic 

1-2 cups Shredded Mozzarella 

2 Roma Tomatoes, diced

1 cup Baby Spinach, chopped

Directions:

1) Preheat oven to 400 degrees

2) Sprinkle corn meal on a pizza stone or baking sheet. 

3) Roll out pizza dough to edges of pan. 

4) Mix olive oil, rosemary and garlic in a small bowl. Spear over pizza dough. 

5) Top pizza dough with shredded chicken, dived tomatoes, chopped spinach and cheese. 

6) Bake for 20 minutes or until crust is golden brown. 

7) Remove from oven, slice and serve!

Happy Friday all! We made it through the first week back in school and I made it back into a pair of pre-pregnancy jeans! Lots to celebrate today. ๐Ÿ™‚

The other day, I was challenged with listing 10 things that made me happy. Try to list 10 items without over thinking the list. Just write down the first 10 things that come to your mind.

How’d you do? Did you get 10? If your list shorter or longer? When I answered this challenge I found my list at 15. Here’s what I had:

  1. My husband
  2. Baby girl
  3. Sleeping in on a rainy morning
  4. Fresh coffee
  5. Music
  6. Spending time with my family
  7. Freshly painted finger nails
  8. Saying my prayers
  9. Checking things off my to-do list
  10. Fresh baked chocolate chip cookies, lol
  11. Running on a clear morning
  12. Finishing a workout I didn’t think I could do
  13. Watching my students succeed
  14. A clean house
  15. Warm laundry right out of the dryer

After I finished the list, I took a minute to really reflect on my top 15. How many items on my list are materialistic objects? How many are people, relationships, memories, personal triumphs, etc? Which ones of these are a daily thing for me?

2017 has been a mind shift for me. For so long (I’m talking years), I focused on material items- new clothes, new shoes, new jewelry- to make me happy. I thought if I wore certain things or filled my shelves with statement necklaces that I would be happy. What I’ve realized from all of this is that I wasn’t truly happy with myself. I was chasing someone I thought I should be. It wasn’t until just recently that I decided it was time to be happy with me. I’ve built a life for myself that I love. I have the best husband, baby girl and family I could have hoped for. My relationship with God has never been stronger. I’m focusing on being happy with the things that can’t be measured by a price tag and with the realization I’ve found that I’m happier than I’ve ever been.

Find what makes you truly happy and go all in.

 

Meal Prep

Little Miss Em
